2 lbs. of Shetler Steak or Roast
6 medium-sized beets (save the greens)
1 onion
1 garlic clove
1 tbsp. of dill
1 tsp. of vinegar
Salt and Pepper to taste
Sour cream

1. Shred beets with cheese grater or cut into small cubes
2. Brown steak or roast and then cube
3. Place shredded beets, cubed meat, onion, garlic, dill, vinegar, and beet greens into crock pot. Fill the rest of the crock pot with water
4. Slow cook on medium to high for 4 hours
5. Add salt and pepper
6. Portion into bowls and add a dollop of sour cream
