Here at Shetler Family Dairy, we love to help you use our ingredients to provide your family with delicious, satisfying meals. Below you will find some of our families and employee’s favorite recipes using our Shetler Products.

Fettuccine Alfredo

Ingredients:
½ cup of Shetler Salted Butter
½ cup of Shetler Heavy Cream
¾ cup of freshly shredded parmesan cheese
8 oz. of fettuccini noodles
4 oz. cream cheese
1 garlic clove (minced)
Fresh chopped parsley
Salt and Pepper to taste

Directions:
1. In a large saucepan, cook fettuccini as directed on package
2. While fettuccini is cooking, in 2-quart pan, heat butter and heavy cream over low heat stirring constantly until butter is melted. Stir in cheese, garlic, cream cheese, salt, and pepper
3. Drain fettuccini and return to saucepan. Pour sauce over warm fettuccini and stir until pasta is well coated
4. Garnish with chopped parsley
Additional recipe add-in’s: chicken, shrimp, mushrooms, kale, spinach, or broccoli

Clam Chowder

Ingredients:
4 (6.5 ounce) cans of minced clams
3 (8 ounce) bottles of clam juice
4 slices of Shetler Bacon (minced)
1 chopped onion (minced)
1 garlic clove (minced)
¼ cup of flour
5 medium red potatoes
2 tbsp. of Shetler Butter
2 bay leaves
1 tsp. of thyme
1 cup of Shetler Heavy Cream
2 tbsp. of fresh parsley
Salt and Pepper to taste

Directions:
1. Drain the clams, reserving the juice. Add the bottled clam juice to the reserved clam juice to measure 5 cups. Use water to make up any difference
2. Fry bacon in large saucepan until crisp, add onion and cook until onion is softened
3. Stir in garlic and cook 30 seconds, add butter to melt. Stir in flour and cook for 1 minute. Gradually whisk in 5 cups of clam broth. Stir in potatoes, bay leaves, and thyme then bring a simmer and cook until potatoes are tender
4. Stir in clams, cream, and parsley. Return to a simmer brined and remove from heat. Discard bay leaves, then add salt and pepper to taste.

Homemade Ranch Dressing

Ingredients:
1 ½ cups of sour cream
¾ cup of Shetler Buttermilk
1 ½ tbsp. of garlic powder
1 tbsp. plus ½ tsp. of onion powder
1 tsp. of salt
1 tsp. of pepper

Directions:
Combine all ingredients in a blender and blend until smooth consistency
Refrigerate for at least two hours to thicken
Enjoy!

Homemade Sour Cream

Recipe by Kaleb

Ingredients:
1-pint Shetler Buttermilk

Directions:
Warm to room temperature
Pour into close-knit jelly bag
Suspend jelly bag over a small mixing bowl overnight
Next morning empty jelly bag contents into a sealed container and refrigerate

Meat Loaf

Recipe by Sally

Ingredients:
2 lbs. of Shetler Extra Lean Ground Beef
1 lb. of Shetler Mild Sausage
1 ½ cups of Shetler Heavy Cream
1 finely chopped onion
3-4 eggs
2 cups of bread cubes
1 tbsp. of minced garlic
2 tsp. of salt
½ tsp. of cayenne or black pepper
½ cup organic catsup
Parsley flakes

Directions:
1. Combine all ingredients, except catsup, in mixing bowl
2. Take mixed ingredients place in loaf pan
3. Spread loaf with organic catsup
4. Cover with foil and bake at 425 degrees for 15 minutes then 350 degrees for 40-50 minutes. Remove foil for last 15 minutes of baking
